I’m a barbecue traditionalist; I love to grill on a charcoal fire. The problem on a boat is the mess attendant to keeping bags of charcoal onboard. It’s a dirty fuel, and a pain to keep on a boat; you only need for the bottom to drop out of a damp bag once and you’ll probably convert to propane. Before going to the boat, I like to transfer my charcoal to doubled-up paper lunch bags, which hold just the right amount for my Kuuma grill, fold the tops over, and secure them with masking tape. Three or four of these fit inside a large Ziploc bag, which is stashed in the lazarette. I just pop a bag onto the grill, stab the paper a few times to expose the charcoal, apply a healthy squirt of odorfree lighter fuel, and set the lot ablaze. No muss, no fuss.
